Take a small paring knife and add a minimum of 1 head of garlic around the roast for the best flavour. Then one hour before the roast is done, add a jar of sauerkraut to the pan, making sure there is at least ½ inch of water on the bottom of the pan.

Pork roasts should be cooked to an internal temperature of 160 F (70 C). After removing from the oven, cover roast with foil and let stand 10-15 minutes. This will allow the juices to redistribute and settle.

Take a large frying pan and cover the bottom with flour and salt. Sear on high temperature until the flour is nicely browned, then take the juice from the bottom of the roast pan and add it to the flour. Mix continuously until thick. You may add a small amount of corn starch and water mixture to speed up the thickening process but please add salt accordingly not to lose any flavour.
