Beef Roast recipe

Take a small paring knife and make small cuts in a 3 lb. roast to add a minimum of 1 head of garlic. Add segments of one large onion with a minimum of 1 inch of water on the bottom of the pan, If you wish, you can add 1-2 packages of onion soup mix on top of the roast for tender, flavour-filled bliss.
 
Insert oven-safe thermometer into meat so that thermometer tip reaches centre of roast avoiding fat or bone. Cook to an internal temperature of 145 F for medium-rare or 160F for medium-well. Remove the roast from oven, cover with foil and let stand 15 - 20 minutes before carving. Note that the roast will continue to cook slightly as it is standing.


Homemade Gravy recipe

Take a large frying pan and cover the bottom with flour and salt. Sear on high temperature until the flour is nicely browned, then take the juice from the bottom of the roast pan and add it to the flour. Mix continuously until thick. You may add a small amount of corn starch and water mixture to speed up the thickening process but please add salt accordingly not to lose any flavour.
